I have a question though…if I replace some of my sugars in my baking recipes with molasses or agave…what are the ratios or measurements in comparison to regular sugar…so a cup of sugar is the equivalent of how much in molasses or maple syrup or agave???

It’s low glycemic, and also contains prebiotics, which feed the good bacteria in our guts. It does have a pretty strong flavor.
I like to mix about 3/4 cup agave with about 1 T yacon, and use that. It tastes somewhat like maple syrup.

Thank you for this. . . we all need reminders to use natural sources of sugar. My husband just got the bad news of “borderline” diabetes and now I am much more aware of the sweetening factor for him. And I agree, those figs always remind me of roaches, but I still love them!
